Chef Tomoaki Mori, a Japanese Chinese, was born and raised in Hong Kong. His restaurant, Sushi Mori was opened in 2013 in Hong Kong and has been listed on Michelin Guide 2018. The ingredients Chef Mori use are delivered daily, with the seafood used at his sushi restaurant coming from Kyushu and Hokkaido and this is his belief to provide the freshness food to his guest. So, he will close the restaurant if the fish market is closed.
