Domus Niseko - La Brace, Cucina, Emporio Bar & Counter

Opening this season in the new TELLUS Niseko building are 3 dining options inspired by the rich cuisine of the Mediterranean - La Brace, Cucina and Emporio.

La Brace will be a high end restaurant in the retail/restaurant space below TELLUS Niseko, "offering to the customers a superlative dining experience with the finest in house dry aged charcoaled beef, seasonal local excellences and an artfully selected Wine list."
With a focus on high quality beef, great wine pairings and a unique fusion of Mediterranean fare with Japanese culinary excellence, La Brace is sure to be another great addition to Niseko's growing fine dining scene.


Cucina will offer a more casual, all-day dining option for not only TELLUS Niseko guests but anyone in Hirafu village, serving everything "from a bespoke breakfast to a delicious after-dinner drink - Cucina is the perfect homely relaxed spot for enjoying a seasonal flavourful all-day dining experience."
There’s rumours Cucina will offer room service to TELLUS guests and with a great Upper Hirafu location, it should be a great option for those looking for a great meal during or after a day on the slopes.


Emporio Bar & Shop is a deli-style dining experience where "customers can indulge in the finest local raw fish and seafood selection and the stunning Champagne and Franciacorta sparkling wine list." A take-away deli selection will also be offered to enjoy throughout the day. Reservations are not needed, so pop in for an apres drink or gourmet snack during your holiday at Emporio.


Midtown Diner

Adding to the growing East village district of Hirafu is Midtown Diner, an all day restaurant & bar in the new Midtown Niseko building. A freshly curated menu has just been released, featuring American favourites like coffee-crusted brisket sandwiches, biscuits and gravy and southern fried chicken as well as unique Asian-inspired dishes like mapo tofu chilli fries, kimchi burgers and Korean BBQ ribs.

Midtown Diner is a relatively large space which makes it great to visit with friends after a day riding at Hirafu or Hanazono (this year's Niseko United and Hanazono shuttle stops at Midtown!) with screens to watch your favourite sports games season-round.

The diner will be open from buffet breakfast to last drinks in the evening so you can be sure to get a great feed alongside a delicious beer or cocktail at this old school diner with a twist.


H Restaurant + Bar

h restaurant will be a new chinese japanese fusion eatery in niseko.

As part of the renovations to Hyatt House Niseko in Hirafu's Shiki building, H Restaurant will be presenting a new Chinese/Japanese fusion concept, which will be a welcome addition to Hirafu's dining scene that is surprisingly lacking in Chinese offerings. Open all day with a la carte options and a set menu during lunch and festive season, guests of all ages can enjoy the unique dishes prepared carefully and lovingly at H Restaurant.

With an emphasis on locally sourced ingredients like Shiribeshi venison and dry-aged wagyu, the menu should offer a sumptuous selection of Chinese inspired meals with Japanese style preparation like fusion dumplings, soul-warming noodle dishes and umami-packed comfort food.

The new H Bar will present a laid back, eclectic vibe for pre dinner drinks, with "warm hues, soft lighting and an unexpected quirkiness encourage guests to settle in, get comfortable, and have a great time." The selection of international wines, French champagne, Japanese whiskey and craft gins will be sure to excite all tastes, and the high tea offered in the afternoon is a delightful way to end a day in the beautiful Hokkaido snow.


Tomo Niseko

New in Kabayama this season at The Orchards is Tomo, a modern izakaya focussing on seasonal ingredients and shareable plates. With a great selection of craft spirits and an affinity for highballs, expect the menu to compliment the diverse range of spirits from artisan whiskey and gin to Japanese liqueurs and cocktails.

Tomo aims to create a space that is made to enjoy with friends and create a dining experience that is all about sharing around dishes with fresh and quality ingredients.


Kitchen by Kamimura

kitchen is a new restaurant by michelin star chef yuichi kamimura in niseko japan.

Although this project by famed chef Yuichi Kamimura technically launched at the end of last Winter, 2019 is Kitchen's time to shine with a fresh opportunity to burst onto the scene. Located close to the flagship Michelin-starred Kamimura restaurant in Shiki, Kitchen is a more casual dining experience. Expect an a la carte menu full of "innovative cuisine paired with a carefully selected range of boutique wines and cocktails."

Guests can enjoy the soft ambience of the "living room" dining area next to a flowing river and snow covered trees as shareable plates emerge during a relaxed, yet authentically Niseko dining experience.

The menu encourages sharing, with dishes like roast vegetable and pickle boards, thick-cut wagyu steak, oysters and sushi bringing together all the best of local and seasonal ingredients from Hokkaido and Niseko to delight customers of all tastes.

Consider Kitchen this season if you're looking for true culinary excellence by a Michelin starred chef in a more casual and relaxed setting - what's not to like!



hakusteak is a new high end steak house in haku villas niseko.

The HakuLife brand means nothing less than complete luxury here in Niseko, and their new restaurant HakuSteak is no exception. Located in the newly built Haku Villas complex on Gondola-zaka, this steakhouse aims to be "in search for perfection", as the inspiration for restaurant came from a family challenge to make the perfect steak.

Making use of the best ingredients in every step of the cooking process is the key to HakuSteak's purpose. With the highest quality artisan seasonings, premier Shiraoi beef from a farm that reserves its cuts exclusively for the restaurant and of course the loving touch of a chef who will accept nothing but the best - HakuSteak's future here in Niseko is promised to be bright and irresistibly delicious.

Surrounding Chef Luiz's beef masterpiece are the 3 set menus which are described as "modern kaiseki", each highlighting the bountiful produce of the Niseko region while catering to pescatarian and vegetarian preferences.

Highlights from the menu include Uni in a Claypot with Hokkaido sea urchin, truffle, fried shallot, aromatic shoyu & rice and the Chef's Sorbet, which changes to a unique flavour each day.


Kato Sushi

kato sushi is a new sushi restaurant in niseko in hinzan apartments.

Located on the ground floor of the refreshed Hinzan apartments (formerly known as Shikaku), Kato Sushi will be a new concept launched by famed crab specialists Kato Seafood. With 55 years of experience behind them, the Kato team will surely delight guests with the freshest cuts of Japanese fish and seafood in a stunning Middle Hirafu location, adding to the growing appetite for high end seafood dining in the village.

Wine and sake will also be a featured part of the menu, with a pairing selection likely on the cards. Details are scarce at the moment, but we expect Kato Sushi to be a stunning addition to the Middle Hirafu dining scene, and with talks of a whole king crab being available for customers to eat (with advance notice), it should be a dining experience few will forget.


Miyamoto San at Uwamuki SPACE Labo

miyamoto yoshitaka of icaro fame will have a chefs table experience in niseko in 2019.

Uwamuki Space Labo in Niseko town will be home to a new chef's table experience this Winter, hosting Michelin starred Italian chef, Miyamoto Yoshitaka. Specialising in Northern Italian cuisine, Miyamoto san has had extensive training in the art of Italian cooking and after spending 7 years perfecting the craft, returned to Tokyo where he received a Michelin star for his Italian restaurant ICARO.

Miyamoto san now has plans to move to the great north of Niseko where he will invite groups of 12 for a sumptuous feast of Italian favourites like antipasto, charcuterie, pasta and delicious Italian desserts. Accompanied by live music in the space, this will be an intimate dining experience with a true master of Italian cuisine, and definitely a night worth travelling for.

Miyamoto san will also be available for catering and in-house dining, so we are expecting to hear great reviews of his cuisine from all over Niseko this season, and are excited to see his interpretation of classic Italian dining in rural Japan.


Pow Bar and Cafe

pow bar and cafe is a new vegan and vegetarian restaurant in niseko town in 2019.

Having just opened in Niseko town, Pow Bar and Cafe is already making waves with the locals thanks to their organic and hearty meals, great coffee and cool laid back vibe. The wooden space right in the heart of Niseko town boasts an impressive selection of wholefood inspired baked goods and light meals, with an attention to vegetarian and vegan options - a much welcomed consideration here in Japan!

Their daily lunch offerings are full of fresh, healthy and locally sourced delights like granola bowls, tempeh wraps, freshly baked vegan muffins and soul-warming soups. We can tell this cafe loves their food and loves it real - making it a great option for those who want fresh food made with love after a day adventuring in the mountains!

Their coffee is also second-to-none, with a custom Pow Bar blend from Baristart Coffee and large selection of coffee styles, it's Australian-style brews are sure to be favourites among coffee snobs from all over.



hanazono edge is a new restaurant bar cafe in niseko this season, it will be on slope at hanazono resort.

An exciting new restaurant, cafe and bar will sit at the base of Hana 1 Lift this year in the form of Hanazono EDGE - a ski in/ski out eatery serving all-day favourites in an impressive new two-story building.

There’s no need to head back to Hirafu for lunch between powdery runs in Hanazono, simply ski down for a bite and you’re back to riding in no time. In a sophisticated elevated space above the restaurant sits a bar serving famous Japanese beer, warm drinks and cocktails for a post-run gathering or quick drink with lunch.
